Cupcakes and Sugar Sprinkles



I have recently been sent some samples of Dr. Oetker Sugar Sprinkles, Polka Dots, Citrus flavour strands, Shimmer sugar and Cake Release Spray (a new product due to be in the shops towards the end of May).

I mixed some toffee sauce into the butter cream, put a blob of toffee sauce in the centre and then sprinkled on some delicious Fudge Chunks.

TOBLERONE SWEET


This recipe is adored by my family and friends and is the most talked about dessert that I have ever made. I haven't made it since my children were small, and I also used to make it for good friends of mine when they brought their daughter with them for dinner. Their daughter even mentioned it to me on her wedding day and said can we meet up some time to eat Toblerone Sweet!

I wasn't sure if we would still enjoy this dessert, as you move on through life your tastes change, and I didn't want to spoil fond memories. I'm delighted to say though this dessert is still wonderful.

Please note this recipe contains raw eggs.

You will need: Lots of bowls!

1 x 200g Toblerone, ½ pint double or whipping cream, 3 eggs, 8-10 teaspoons hot water.

1. Grate 2 teaspoons Toblerone for decoration.
2. Melt the rest of the Toblerone gently in a basin over hot (not boiling water).
3. Whip the cream lightly.
4. Separate the eggs. Whip the egg whites until stiff, but not dry.
5. Whip the cream lightly in a large bowl.
6. Add the egg yolks gradually to the cooled chocolate, then mix in 8-10 teaspoons warm water, so that the chocolate is runny.
7. Fold the egg whites into the cream. Add the chocolate mix. Fold in from the bottom of the bowl, be careful mixture does not curdle.
8. Pour mixture into either a 1 pint serving dish or individual glasses. Decorate with the grated Toblerone. Leave to set covered in the fridge.

BANOFFEE PIE


I love desserts, and Banoffee Pie has to be one of my favourites. It isn't a dessert I make very often, but when I do, it's heaven.

Mine are individual pies purely because I like to give my cooking rings some work to do every now and again.

The only twist to this classic recipe is to put some ground ginger into the crumb base, not too much, otherwise it will overpower the pies.


To serve: 6 people

You will need: six buttered 9cm or 10cm metal rings.

4 bananas, sliced
1 lemon, juice only
150g digestive biscuits
75g unsalted butter, melted
½ teaspoon ground ginger (optional)
450g jar Toffee Dulce de Leche
284ml carton of whipping cream, lightly whipped
plain chocolate shavings, for decoration

1. Toss the sliced bananas in the lemon juice and put to one side.
2. Put the biscuits in a food processor and whiz to crumbs. Add the melted butter and ginger, if using, and process for a minute or so to combine.
3. Put the metal rings on to a sheet of baking parchment on a tray. Press the biscuit crumbs into each ring. You can now put the tray into the fridge for the crumbs to firm up.
4. Remove the tray from the fridge and put a layer of toffee sauce (how much or how little is up to you) onto the crumb mixture.
5. Top the toffee sauce with the banana slices.
6. Carefully remove the rings.
7. Pipe or spoon on the cream, sprinkle with chocolate shavings and chill.
