Strawberry Cake - Recipe

Fantasy Cake - a recipe by Lisa Faulkner

I've been away from home this week and have indulged in some fabulous food, especially my treat of the week, which was an evening meal at Le Caprice. As regular readers know I love coffee, and I've had more than a few expertly made cups this week but the best was definitely at Le Caprice.

I made this cake a couple of weeks ago and have to say my strawberries have been amazing this year, I can't believe how many strawberries you can get off two rows. I've made a few strawberry cakes this year from them and these are now my favourite summer cakes, they're fabulous, especially if you serve them with cream.

I came across this recipe whilst browsing through some cookery books in the library, a quick search on the web and everyone agreed this cake is one of the best strawberry cakes ever.

The recipe can be found on the Waitrose website and they have a video on You Tube showing the cake being made -  I'd recommend using the method shown on the video and not the one on the website. My only comment regarding the recipe is the amount of strawberries used which is 400g, I used less and it was absolutely fine.

The cake keeps really well covered in cling wrap and stored in the fridge.

Make it before all the fresh strawberries disappear!

                                                       VIMTO SQUEEZY - REVIEW

I was delighted to be sent Vimto Original, Cherry and Strawberry to try, the weather has been hot and the timing was perfect.

The Vimto Squeezy is lighter than a cordial in taste, I'm not always very keen on cordials, some taste like boiled sweets - perhaps it's just me who thinks this, but these are excellent and definitely don't taste like boiled sweets!

These mini bottles are easily transportable to flavour bottles of water whilst you are out and about. Handily they will also fit into my handbag and take up no space at all.

The squeezy bottles come in a small 50ml bottle and are sugar free.  To flavour a 500ml bottle of water simply squirt in one teaspoon of Vimto.  There are approximately 25 servings in a bottle and at a RRP of just £2.49 they are very good value.  Available from Tesco, Asda, Sainsbury's and Co-op Stores.

Disclaimer:  I was sent the products for review, all thoughts are my own.

Cheese, Onion and Potato Quiche with a Wild Rice Salad - Recipe

This fabulous quiche recipe is by Tom Kerridge
One of my favourite websites is BBC Good Food, I love reading the constructive comments from those who have made the recipes.  The recipe is by Tom Kerridge and apparently he makes this for his pub restaurant. Everyone said that there was too much mixture for one quiche and they had lot's left over. One commenter said how she adapted the recipe to give enough filling with none left over. I followed her suggestion and it has worked out brilliantly.  To make the full quantity you will need a deep quiche tin approximately 5cm deep.

It's a fabulous quiche, the pastry is easy to make and gloriously crisp to eat.  There is a layer of cooked new potatoes, spring onions and Montgomery Cheddar cheese cooked in a creamy custard layer.
No soggy bottom here!
I used the bottom heat setting to bake my pastry which gives a lovely crisp pastry base - the custard layer is also cooked very gently on a low setting using bottom heat to give a luxurious velvety custard.

Hubby said this is the best quiche he has ever eaten and people on the BBC Good Food website have said it's their favourite too.

Adapted recipe

225g plain flour, plus extra for dusting
140g cold butter, diced
1 tsp icing sugar
1 egg yolk
For the filling:
250g new potatoes, no need to peel, cooked and sliced
1 bunch spring onions, sliced
125g Montgomery cheddar, diced
2 eggs
300ml double cream

You will need:  23cm loose base fluted tin 2.5cm deep

1. Sift the flour and a pinch of salt into a large bowl. Add the butter and rub in until it resembles breadcrumbs. Stir in the icing sugar, egg yolk and 3 tbsp cold water, to form a firm dough. Wrap well in cling film and rest for 20 minutes in the fridge.
2. Preheat the oven to 200ºC.  Roll out the pastry and line the tart tin. Cover with baking parchment and fill with baking beans. Cook for 20 minutes, then remove the paper and beans. Brush the pastry base with beaten egg and cook for 5-10 minutes more until the tart case is pale.
3. Turn the oven down to 160ºC. Place a layer of cooked potatoes on the base of the tart, scatter over the spring onions and cheddar. Whisk together the eggs and cream, season. Pour into the tart case and cook for 40-45 mins or until just set. Remove from the oven and cool on a wire rack.
Original recipe

I served a Wild Rice Salad with the quiche........the glass bowl is by Arcoroc they are amazing and great multitaskers. I purchased a set of different sizes from Divertimenti, they are light weight, nest inside each other, don't scratch, freezer, dishwasher and microwave safe and it's free postage too. Cons are they are quite shallow so absolutely no good for some whisking tasks and they aren't oven proof(but this isn't an issue with me).

225g wild rice
850ml water
1 red and 1 yellow pepper, sliced into strips
cucumber sliced lengthways
1 orange, peeled, pith removed and segmented
A handful of cherry tomatoes quartered
1 red onion finely sliced
handful of chopped parsley
Dressing:
1 clove of garlic, crushed
1-2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
seasoning to taste

1. Pour the water into a large pan, bring to a boil.  Stir, cover and simmer for 40 minutes until tender.  Drain and cool. Or use a microwave rice steamer and cook for approximately 30 minutes.
2. Add the dressing ingredients to a basin and whisk together.  Pour onto the cooled rice.
3. Mix the peppers, orange, tomatoes, red onion and parsley into the rice mixture.
4. Store in the fridge until needed.

Recipe: Chilli Con Carne - Midweek Meals

We stayed home during the Easter break but escaped every day and ate out, one of our favourite places to stop before we head to Wales is Weobley in Herefordshire. The village is part of the Black and White Villages Heritage Trail, and a gem in the village is The Gables Tea Room, the food here is amazing and it has a unique warmth and cosiness from the moment you open the door, it was bitterly cold on the day we visited and everyone made a beeline to the welcoming log burner.

At some point I had to cook over the holiday and looking through a few of my Waitrose recipes found this quick chilli con carne recipe which is taken from their November 2012 magazine.  The secret ingredient is a piece of dark chocolate added at the end of the cooking time,  it really does make a difference and gives a great depth of flavour to the finished chilli.

Chilli is a great midweek meal and can be served simply with a jacket potato and a serving of rice, well that's how we like ours.

It isn't the most attractive of dishes but served in a fabulous casserole and dressed with either coriander or parsley makes a huge difference to the eye.

Adapted recipe.

Serves: 4

2 tablespoons olive oil, 500g Aberdeen Angus mincebeef, 1 chopped onion, 2 crushed garlic cloves, 1 red chilli finely chopped, 1½ tsp cumin, 1 tsp mild chilli powder, 1½ tsp dried oregano, 1 tbsp tomato puree, 400g can chopped tomatoes, 400g can organic red kidney beans (rinsed), 1 piece of dark chocolate, parsley leaves to decorate.

1. Heat a tbsp of oil in a large pan and cook half the mincebeef until brown, cook the remaining mincebeef.
2. Cook the onion, chilli and garlic in the pan with the remaining olive oil.  Cook gently until the onion has softened.
3. In a pan dry fry the cumin until the seeds release their flavour, tip into a pestle and mortar and grind to a fine powder.  Add the ground cumin, chilli powder, dried oregano and tomato puree to the pan containing the onion and cook for 2 minutes.
4. Return the mincebeef to the pan, add the chopped tomatoes and 250ml of water.  Bring to the boil, simmer, cover and cook for 45 minutes.
5. Stir in the rinsed beans and the chocolate, season.

Mincemeat Bites with Five Seed Topping - Recipe

The crunchy toasted seeds are very, very, delicious
There are so many fabulous Christmas recipes in cookery books and magazines I find it difficult to throw any of them away.  Unfortunately there isn't enough time to either cook or eat the majority of them. This year I thought why not start cooking and eating my Christmas bakes early.  I am already thinking my waistline may regret this decision but as I don't have any weight issues, as yet,  hopefully I will get away with it.......I'll let you know after Christmas if I have any makes and bakes regret.

Quick and easy Christmas recipes that work are a priority, and this little number from a Waitrose recipe card is a winner - think sausage rolls but with a sweet mincemeat filling. Ready rolled puff pastry, add a handful of dried cranberries or dried sour cherries to either a home made mincemeat or a quality bought one and a few seeds scattered over for crunch - I used pumpkin, sunflower, poppy seeds, sesame and linseeds.

Adapted Recipe

You will need:  Greased baking tray

375g pack ready rolled puff pastry, 300g good quality mincemeat, handful dried cranberries, lightly beaten egg, 50g mixed seeds, 2 tbsp sifted icing sugar.

1. Preheat the oven to 200ºC.
2. Cut the pastry in half lengthways. Put half the mincemeat down the centre of the pastry strips and scatter over a few dried cranberries.
3. Brush the beaten egg along the edges of the pastry.  Roll over to make two long rolls. Seal the edges together.
4. Place the rolls onto the baking tray cut side down, brush with egg, sprinkle over the seeds.
5. Bake for 20-25 minutes or until cooked. Cool, cut into mincemeat bites, dust with icing sugar.

Braised Red Cabbage With Apple - Recipe

This Braised Red Cabbage with Apple recipe from Waitrose is one of many red cabbage recipes I use, but I always make this one for Christmas Day, it is so delicious and tasty.

The perfect sweet/sour taste, not too spicy and sweetened with light muscovado sugar and redcurrant jelly - can be made in advance and frozen too.

To freeze: Line a baking tray or similar with clingwrap, place the cooked braised cabbage onto the lined tray, spread over the base, cover with clingwrap, place in the freezer.  When frozen remove and cut into portions.  Wrap each portion in clingwrap, place into a ziplock bag and return to the freezer. To reheat: defrost and reheat in the microwave.

The recipe can also be found in the Waitrose Christmas Harvest 2012 recipe guide.

Diamond Jubilee Strawberry Crumble Crunch

The recipe for the  Heston Blumenthal Diamond Jubilee Strawberry Crumble Crunch can be found on the Waitrose website or you can watch the recipe video.

My recommendation is to make this in individual pots, because it looked a bit messy on the plate when I served it up.

Enjoy the holiday - back soon!
